Bite Into Ecstasy: Have A Chicken Sandwich

All it takes is two slices of whole wheat bread, a few pieces of chicken or chicken salami, a dash of mayonnaise, pepper and mustard, a slice of tomato or iceberg lettuce to go with it and you have yourself that much loved chicken sandwich!  A favorite of millions the world over, the chicken sandwich serves as a whole meal during lunch or dinner for many and also as an inter-meal snack item for tea parties. What’s more, when you have unexpected guests at home, it’s one of the easiest items to serve with a drink, tea or coffee in a jiffy.

Preparing a chicken sandwich is hardly difficult. You need to butter two slices of sandwich bread after slicing off the edges and then set them aside. Take the boiled chicken nuggets or even shredded boiled chicken in a bowl, sprinkle pepper and salt to taste, add a generous amount of mayonnaise, a dash of tobasco sauce if you want that extra zing and the sandwich filling is ready. Goan Fish Curry: A Carnival For Your Taste Buds

Visiting Goa and not tasting its Goan Fish Curry is something similar to imagining a world without flowers, palm trees and the high seas. Fish is an inextricable item of the Goan diet and the average Goan simply can’t do without it. The sheer abundance of fresh sea fish along the coastline only makes it simpler.
Picture this: You are served a whole pomfret or chunks of tuna or boneless mackerel in a rich golden brown gravy that has onions, tomatoes, red chillies, garlic, ginger, fresh grated coconut, cumin, coriander, turmeric and green chillies. The gravy, moreover, has the tangy taste of tamarind that makes it different from the other fish curries cooked elsewhere in India.
Believe me, it’s sheer magic! Take a spoonful of the wonderful golden brown gravy and swirl it around your mouth as if you were tasting an exotic wine. It’s sure to play havoc on your taste buds. There’s the tangy taste of tamarind, the fierceness of red chilli powder, the zing of the cumin--coriander combination, the smoothness of the right use of salt and the slightly sour taste of the dash of vinegar that was used to cook the gravy. Sheer heaven, won’t you say? Eat it with steamed rice, preferably with your fingers. It’s an experience no fish lover will ever forget. What’s more, Goan Fish Curry uses very little oil and is therefore, healthy, too. The sea fish is, moreover, rich in Omega D3 fats and makes your heart stronger. Clean the fish and marinate with a little vinegar, turmeric and chilli powder. The gravy is prepared by first frying the sliced onions and garlic together. Once the onion turns translucent, the ginger is added and the frying continues till its aroma can be smelt. Subsequently, the fish, coriander, tamarind, cumin, and grated coconut are added. Once these have been properly sautéed, add a little water to it and set to boil.  Allow the gravy to boil for 10-15 minutes and simmer for another ten minutes. This should allow the fish to soften. Serve with steamed rice.

Sauté 3 oz sliced raw salmon in about 1/2 tablespoon olive oil. Do this until fish is opaque, that is, for about 1 to 2 minutes. Now add two beaten eggs and scramble those. Serve with 1 cup spinach tossed in 1 tablespoon olive oil and 2 tablespoon balsamic vinegar.

Egg and Cucumber Sandwiches for Lunch
Take two hard-boiled eggs and slice them into half. Using a fork mash yolks, 1 tablespoon Greek yogurt, 1/2 tablespoon Dijon and 1 tsp chopped dill, after which spoon into egg-white halves. Now you need to spread 1 slice Ezekiel bread with Dijon. Slice the bread diagonally into 4 pieces and top each with 2 cucumber slices, 1 piece of feta cheese and egg.

Hazelnut-Crusted Salmon with Strawberry-Cucumber Salad for Dinner
Mix 2 tablespoon finely chopped hazelnuts with 1 tablespoon olive oil, with salt and pepper to taste. Coat a 4 oz salmon fillet with the mixture, and bake it in an oven which must have been preheated to 350°F. Do this until fish is flaky, which takes about 8 to 10 minutes. With 1/4 cup sliced strawberries and 1/2 cup sliced cucumbers on plate, put that on plate and sprinkle it with 1 oz crumbled feta cheese and balsamic vinegar as per taste.

Perad is yet another sweets delicacy in Goa which is conventionally prepared guava cheese. The rich brown color and mouthwatering taste of Perad has made it a favorite of many people.

Goan Chorizo –– Spicy, Flavourful and Divine

Among the many culinary treasures the Portuguese have left behind in Goa, the choriz sausage is perhaps the most popular, especially in the Catholic community. The chorizo sausages can be found in other places as well, particularly in the Iberian peninsula. However, the Goan sausage retains its own unique identity.

The Portuguese influence
These spicy sausages are quite common in the Iberian peninsula, in both Spain, Portugal and nearby areas. They are available fresh, fermented, cured or smoked. In these areas the chorizo sausage is very popular, often grilled, fried or eaten with something alcoholic. In Spain Chorizo are sweet or spicy. The leaner chorizos are often eaten as starters in tapas, while the fatter version is used in cooking. When added to other dishes, the chorizo imparts its own unique spicy flavour. It is often used as a substitute for meat. Apart front the Iberian peninsula, chorizos are also eaten in Mexico.

Like its counterpart elsewhere, the chorizo in Goa is also made with pork meat. There are many similarities, including its spicy nature. However, the Goan sausage is much spicier, almost too much so for the Western palate. Unlike many of the cured and smoked sausages of Spain and Portugal, most Goan sausages have to be cooked before eating.

These sausages are made of pork, vinegar, ginger, garlic, chilli and other spices. Many sausages do come cured, however, most os them do have to be cooked before eating. You can also get skin sausages that use pork skin for casing. But they are quite rare to find. Chorizos in Goa are sold according to their spicy factor –– mild, medium and hot. Other variations include lean and fat, dry and wet.

There are almost unlimited ways of cooking chorizo. It is cooked not just in homes, but is also one of Goas best street food items. Served with just pao with its juices dripping, it is a quick and delicious fast food. They are sometimes used as substitute in gravies like vindaloo and Feijoada. These flavourful sausages also form a handy stuffing for a pig roast. Another ever-favourite is the sausage pulao.

Get the grub

Delicious and wide in its range of dishes, you can load your table with some amazing delicacies. Given the States long coastline, seafood is pretty important. Goans also love their meet, including pork and beef dishes. If you have no religious restrictions, consider including these all. 

Start with a starter of crab cakes or fish fry. For the main course you must have the famous Goan fish curry. Akin to comfort food, the fish curry is Goan fast food. For meat dishes, choose from vindaloo, sorpotel or roast pork. If beef is not taboo, try a Goan roast beef. ALternatively, you can also try chicken or crab xacuti.
